Shola’s Bad Ass Bagels

admin | Wed 5:44 am
No seriously, don’t even think about attempting these unless you want to never enter another Einstein again without instantly bursting into uncontrollable laughter at what they call…bagels. HA! So the story is my bro from work, Emma, is in what must be relationship bliss with this dude. Not just any dude. This dude makes the best goddamn bagels known to man. Well at least this man. She brings them in just about EVERY DAY…and the worst part is….she only brings enough for her. Ahhh!! Whats up with that? Totally unfair!! No bagel love in the office?? No really she has brought ...

Lamb pita burgers stuffed with goat cheese and covered with Tzatziki Sauce

admin | Mon 10:29 am
I am so ready for the grill. I mean…I just cant wait for summer to be here. If fact…I’ve already started hitting the grill. Dusted off the snow from the top of the rusty old weber and made some amazing porterhouse steaks. But alas they are not here because everyone knows how to cook a porterhouse…including me…with three glasses of wine in me. So here it is. On the verge of some fabulous greek-ish flattened lamb meatballs, otherwise known as oblong burgers, and then.. the grill.. ...

Grandma Ople’s Apple Pie

admin | Mon 5:33 am
Made this from a recipe found at allrecipes.com. Best apple pie ever. The method of pouring the “goo” through the lattice really makes the top crust crispy and sweet. Nutmeg and cinnamon were added and weren’t on Ople’s original recipe. Perhaps they were out at the general store when she sent Opie to fecth’in her some greedients. 1 recipe pastry for a 9 inch double crust pie 1/2 cup unsalted butter 3 tablespoons all-purpose flour 1/4 cup water 1/2 cup white sugar 1/2 cup packed brown sugar 8 Macintosh apples – peeled, cored and sliced 1 tsp cinnamon 1/4 ...

Apple Strudel with Calvados Brown Butter Sauce

admin | Sat 9:09 am
At a recent Hands On Gourmet event the Apple Strudel took center stage. Everyone that was involved in making this all time classic pastry became tickled pink. Laughter, butter and apples are great ingredients for fun! Strudel is an age old Viennese pastry that has a wonderfully simple tart, sweet, juicy apple filling.  The dough is super stretchy and elastic as the photo shows. And that really is the secret to get up off your chair and yodel strudel. If your dough is ...

Eggnog Spiced Oatmeal Cookies

admin | Fri 5:01 am
New things can be exciting but sometimes old standbys provide just the comfort you need. Each year food blogs and magazines are flooded with cookie recipes.  If you have the time and inclination, the hunt for new recipes can be exciting.  This year, I don’t have the time since we are buzzing at the H.O.G. Estates helping many-a-client celebrate the holidays… cooking parties galore!  And, since I have had a number of requests for this Spiced Oatmeal Cookie I made last year, the decision was easy.  I made them again. When in doubt, homemade gifts ...

What You’ll Need: 4 live Dungeness crabs (about 1 1/2 lbs. each) 1/4 cup kosher or sea salt 10 quarts water 3 gallon pot* I know a lot of recipes call for mire poix, lemons and crab boil… but for me it’s not necessary. Low Country Shrimp Boil with Homemade Old Bay

admin | Thu 22:44 pm
Around our house Sunday’s are usually reserved for some type of exercise and an uncomplicated get together. I really love making a big warm cozy meal like gumbo, cassoulet or beef bourguignon then call to see who can make it over. Our dinner friends bring the bread, greens, sweets and drink and we supply the main attraction; it doesn’t get easier than that! Last week I had some gorgeous gulf prawns on hand and decided to take them back to my Virginia Beach roots with a low country shrimp boil. The dish ...

S’mores From Scratch

admin | Mon 22:51 pm
Hi, this is Stephanie Masquelier, operations manager of Hands On Gourmet and pastry chef and business owner of Flours, a custom wedding cake business.  I have stopped in at the H.O.G. Food Blog to tell the tale of our recent S’mores experiment.  Homemade graham crackers have been on my list of recipes to test for a while now, so when I had the opportunity to experiment with a new S’mores recipe with Chef Stephen Gibbs at Hands On Gourmet, I couldn’t wait to get started. But first, a little ...

Salt

admin | Sat 23:51 pm
Hi there… I initially wrote this post a year and a half ago when readership was somewhat low. I wanted to re-post this as I feel that it’s such a relevant topic. Not long ago I had a meal that was destroyed by over salting. On a recent episode of top chef a contestant was lambasted for turning in a “salty” dish.  salt salt salt. The moral of this story is to not abuse salt! an accent to a dish, a way to boost other flavor profiles.. and nothing more –any thoughts? have any of ...

Baked Beans with Brown Cardamom

admin | Tue 5:46 am
I’m a big time lover of baked beans. Not long ago when I was hankering for a bowl of them I decided to make a batch here at home. Now I’m not opposed to some of the better canned varieties but the ones you see in the picture put me over the moon! This slow-cooked home version tasted so much better than the ones out of the can. Creamy, tangy and sweet with fresh pepper and a lingering smoky note. I had these with pork chops but they would also match well with roasted chicken ...

BBA Challenge: Challah

admin | Wed 17:44 pm
I’ve been horrible about the Bread Bakers Apprentice Challenge: no book at first, then problems finding the right flour, then a lack of time, blahblahblah fishcakes. No more excuses. I couldn’t find the right flour, but I had AP flour on hand, so I went ahead and made the BBA challah. I was instantly reminded of the mind-melting awesomeness of homemade bread. As you set out mixing the ingredients, you may think, “This is nothing but a tremendous pain in the ass I don’t have ...
